I just try my own recipes! It's only me that's eating it so if an experiment doesn't work out it's only me that can complain WD! Basically I seasoned them with a small amount of sea salt and fresh ground black pepper, then laid them in a deep jug with enough Cointreau to cover (they also maranade well in Drambuie and for those that don't like using alcohol I've also used the juice from Summer Fruits Compote - blackcurrants, strawberries, blackberries, redcurrants and raspberries all reduced to a pulp and the juice drained over the meat. Leave to maranade in the covered jug for 4-5 hours in a fridge. The way I cooked these medallians was in a heavy frying pan heated on a medium heat and with about 2 teaspoons of good quality olive oil heated until it is sizzling.
Put the medalions into the pan and fry for 3 minutes on each side - no longer otherwise the meat gets too chewy!
Once they are cooked turn the heat down to minium and pour on the juices from the maranading (what I do is to make a small amount of gravy mix with some boiling water from the vegetable that I cook to go with the dish in a jug and then add the maranade to that and then pour it over the meat in the pan and simmer for a couple of minutes. Serve with new potatoes or if they are not available then mashed potato and parsnips combined is nice, with fresh cooked vegetables. Serve with a nice glass of red wine. Also nice to go with it is a bit of Hot Horseradish Relish and some sage and onion stuffing 2020 Pangea Green 1st Edition D240 New Defender 110 is here and loving it
2018 Melting Silver Mini Countryman PHEV - soon to be replaced
2015MY Corris Grey SDv6 HSE Dynamic, the best car I have ever owned, totally reliable only a cou0le of rattles in 3 years, now no longer in my care
Also in my garage is a 1996 TDi300 Defender 90 County HT made into a fake CSW

Bambi No.2 got slaughtered by one of my friends at 4am this morning as he was trying to keep up with me on a run down south. Wink

He was lucky it went under the car and not onto the bonnet and windscreen. Also not much damage....just the poor Deer......completely gutted Exclamation

Still thankfully it was a company car. TDV6 - gone
TDV8 - gone

Yep, you'll need to gut it before marinating it in Cointreau.
